How to store ghee, and how to tell if it has gone bad
Good ghee keeps for months without a fridge. The two things that spoil it are water and air. Keep both out and your jar stays fresh.
How long does ghee last?
- Unopened: about 12 months from packing, in a cool and dry place.
- Opened: best used within about 6 months.
Where to keep it
- A closed jar, away from the stove and direct sun.
- No fridge needed. In a very hot kitchen, a cooler shelf helps.
- Glass is best. It does not hold smells.
The dry-spoon rule
Never dip a wet or used spoon into the jar. A few drops of water are enough to start spoilage. Use a clean, dry spoon every time.
Solid, grainy or liquid?
All normal. Ghee melts in summer and sets solid and grainy in winter. The taste does not change. If you want it soft, stand the closed jar in warm water for a few minutes.
Signs ghee has gone bad
- A sour, bitter or "paint-like" smell (rancid).
- An off, stale taste.
- Mould or dark spots, usually from water getting in.
If you notice any of these, do not use it.
Can you test purity at home?
Tricks like melting a spoonful in your palm or in a pan can hint at heavy adulteration, but they are not reliable and cannot catch careful mixing. The only dependable check is a laboratory test. Here are our lab reports.
